The actress, best known for playing Chas Dingle in the ITV drama, is one of ten contestants who have today (November 13) been officially confirmed for the reality show's latest series.
Speaking of her involvement for the first time, Pargeter insisted that she won't be looking for a new career direction after her stint in the high-profile programme.
She confirmed: "I am not doing it for those reasons. I have got a job and I am not doing it to further my career. When I come out of the show, I will go back to Emmerdale. For me, it's more of a personal challenge."
The 36-year-old admitted that she agreed to take part "on the spur of the moment" after being approached by the jungle show's bosses.
"I am bricking myself now about going into the jungle," she said. "You start thinking 'Why am I doing it? Why am I putting myself through it?'
"I do tend to make all my decisions in life on the spur of the moment. I don't really think about it. But at the same time, there comes a time where it's good to make myself do something I would not normally do.
"I am 36, I don't challenge myself, I don't do anything out of the ordinary. I am very happy with the routine of my life I have got."
Pargeter added that the biggest challenges will be appearing out of character and being involved in Bushtucker Trials.
She explained: "I have always been able to hide behind my character. People will see me as me, which is weird to get your head around. That is the most worrying part, really. I am most scared of the fear of people not liking you.
"But I want to give everything a go. The challenges are not there for you to enjoy. They are there to cause you grief and make people laugh!"
