The TV vet was helping to move the crocodile into a new enclosure when it head-butted him, leaving him with a split lip and broken teeth.
In an interview with The Telegraph , he said: "I was medivac'd to JoBurg for assessment and surgery in one of its trauma hospitals."
He added:"If this kind of wound isn't cleaned and stitched properly straight away, it can take a huge amount of corrective intervention at a later stage to avoid serious disfigurement."
Evans said the close encounter left him unable to chew or bite.
"For the last 10 months I haven't been able to bite using my front teeth so have had to tear my food into chunks to eat."
"I got some very funny looks when filming in Australia earlier this year when I sat down in a McDonalds to eat a Big Mac with a knife and fork."
The attack didn't put the presenter off crocodiles as he returned to filming 48 hours later.
Operation Maneater airs tomorrow (September 21) on Channel 4 at 8pm.
